Process: The traditional oil extraction process is commonly known as Ghani (also spelled Gaana or Chekku) 🐂.

It's an ancient, non-mechanized method primarily used in India for producing edible oils, often referred to as Kachi Ghani (meaning "raw" or "unprocessed" Ghani).

Key Characteristics of the Ghani Process

  • Equipment: A large mortar and pestle system, often made from Vaaghe wood (also known as Albizia odoratissima or Siris in English). The equipment itself is called Ghani, Chekku, or Ganuga in various Indian languages.

  • Power Source: Traditionally, the pestle is driven by a bull or ox 🐮 walking in a circular path, achieving a very slow rotation speed of 2-3 revolutions per minute (rpm)

  • Process: The slow, no-heat crushing action gently presses the seeds to extract the oil.

  • Superiority: This process is highly valued because:

    • It operates at a very low temperature (well below the threshold for "cold-pressed," which is often up to 120 F or 49 C, ensuring the oils are not heated by friction, thus preserving heat-sensitive nutrients.

    • It retains a higher concentration of natural aroma, flavor, and macro/micronutrients, including antioxidants, compared to high-speed or solvent-extraction methods.

    • It's a zero-waste and sustainable method (when bull-driven), using no electricity and resulting in a residue (oil cake or "pina") that is valuable as cattle feed or fertilizer.
