Process: natural traditional process uses huge mortar and pestle made of Vaaghe wood (Albizza Odaritissma, called as Syrissa in English and Mimosa Flexuosa in Latin). Mortar is fixed in the ground and the pestle is rotated by bulls or ox at 2-3 rpm. The process produces oils that are rich in macro and micro nutrients including antioxidants as this slow, zero-waste process (no electricity used) is considered superior to cold-pressed methods as they retain aroma and flavor in addition to nutrients.
